Appam - South Indian Cuisine

Appam is kind of pancake made from fermented rice batter and coconut milk.It is majorly eaten in the states of Kerala and Tamil Nadu.It can be eaten for breakfast or dinner.We are going to cook appam in appam maker with semolina knows as sooji appam.

Ingredients :

1 cup Semolina/sooji
1/2 cup thick curd/yoghurt
1 chopped green chilli
1 medium sized chopped onion
1 medium sized chopped tomato
Pinch of turmeric/haldi powder
Pinch of baking soda
Pinch of Eno salt
Salt to taste
2 tsp oil for greasing appam maker
1/2 cup Water

Method: Take a big bowl mix sooji,curd and water and whisk it avoid any lump formation.Add all spices and veggies including tomato,onion and green chilli. Mix well batter should be semi solid like for idli.

Put appam maker on gas burner and heat it on medium flame.Ensure appam maker is centrally aligned to the flame.Add a drop of oil in each cavity and add a tbsp of batter in each cavity and drop of oil on the batter.Cover the appam maker with lid and cook on low flame for 1-2 mins.Remove the lid and turn the appam with blunt knife and cook it from other side too by covering lid again for 2 mins.Cook from both sides till it is light brown as shown in attached image.

Serve it hot with tomato,mint coriander or coconut chutney.

Its healthy and easy dish to try for breakfast or snacking :)
