Trianga Pulao

Bored of eating dal rice , khichdi than try this tricolour pulao and that too without any artifical colors.
Trianga Pulao consist of three layers green , white and orange like our Indian National flag.Its healthy and one pot meal.

Ingredients :

1 cup boiled rice
1 cup of boiled vegetables (potato,cauliflower,peas ,beans and carrot etc)
3 big sized tomatoes (pureed)
1 big sized onion sliced lengthwise
1 big sized green capsicum sliced lengthwise
3-4 tbsp coriander mint chutney
2 tbsp oil
1/2 tsp garam masala
Salt to taste
1 tsp red chilli powder
1tsp cumin seeds
2 tbsp butter

Method : We will start with orange layer , heat oil in wok and add sliced onion ,cook till they are light brown in color ,add capsicum and saute for 1-2 mins ,add tomato puree along with spices i.e. salt, garam masala and red chilli powder and cook it on low flame till gravy leaves oil on sides (around 9- 10 mins).

Divide boiled rice in two parts and add coriander mint chutney to one portion of rice along with salt if needed and mix well. For the remaining portion of rice heat butter in pan and add cumin seeds and salt to taste, switch off the flame.Add this butter mixture to remaining boiled rice. So we have green and white rice ready with us.

Now in the gravy, will add boiled vegetables and little amount of water and cook for 4-5 mins.
Gravy is ready.

Take a microwave safe bowl ,assemble green rice at bottom,press it slightly evenly on the surface of bowl , spread evenly white jeera rice over it and finally top it up with vegetable gravy layer .

Its looks beautiful ,serve hot with ur choice of raita or pickle.
