Eggless Fresh Fruit Cake

Fresh fruit cake is my husband's favourite cake so this was baked by me on our 5th wedding anniversary few days back. It taste yummy with goddess of cream blended with exotic fruits like pineapple, cherries and kiwis.

Ingredients for Baking cake :

1+ 3/4 cup All purpose flour/Maida
3/4 cup Sugar
1+1/4 cup Thick Curd
3/4 cup Vegetable Oil
1 tsp Baking Powder
1/2 tsp Baking Soda
1 tsp Vanilla Essence

Ingredients for Icing and decorating Cake :

1 sachet of Milky twist Whipped Cream ( I used ready made powder just need to add cold water)
1/4 cup of tinned Pineapple chunks
1/4 cup of Cherries
1/4 cup of freshly cut Kiwi chunks

Method : Sieve all purpose flour and keep it aside. Take another bowl and add curd and sugar in it whisk them with whisker till sugar is dissolved. Now add baking powder and baking soda and keep it aside for few mins. Once bubbles start forming in this mixture add vegetable oil and vanilla essence and mix well. Now start putting all purpose flour in this mixture in small batches and mix well.

Pre heat microwave at convection mode at 180 degree for 10 mins and pour batter in greased cake tin and bake it at 180 degree for 30-35 mins till its done. Take it out once done and keep it on wire rack for cooling.

Method for Icing and layering : Pour whipping powder in bowl and add cold water as per written on pack. Whisk it with whisker for 6-7 mins till whipped cream is ready. Keep it in fridge for 15 mins ( as it was written on pack I used).

Slice the cake into two halves from middle and start applying whipped cream on lower half portion and put the other half on it and follow same procedure. Once done decorate with fruits as per ur wish. You can use any fruit including apple, orange, strawberries, grapes and mango whatever available with you.

Keep it in fridge for 2-3 hrs and than enjoy home made fresh fruit cake.
